Ingredients

For the Ice Cream

  • 2 cans coconut milk Use full-fat coconut milk for creaminess.
  • ¾ cup sugar Can be substituted with erythritol or stevia.
  • 1 teaspoon vanilla extract For flavor enhancement.
  • ¼ teaspoon salt Balances sweetness.

For the Cherry Sauce

  • 1 cup cherries, pitted and halved Fresh or thawed from frozen.
  • ¼ cup sugar Adjust based on the tartness of cherries.
  • 1 tablespoon lemon juice Adds acidity; can substitute lime juice.

Instructions

Preparation

  • Gather all ingredients. Open the cans of coconut milk and measure out the sugar, vanilla extract, and salt. Wash, pit, and halve the cherries.

Ice Cream Base

  • In a mixing bowl, combine coconut milk, sugar, vanilla extract, and salt. Whisk until the sugar is completely dissolved.

Churning

  • Pour the coconut milk mixture into an ice cream maker and churn according to the manufacturer's instructions (about 20-30 minutes).

Cherry Sauce

Serving

  • Scoop ice cream into bowls or cones and top with warm cherry sauce.

Notes
