Instructions

Preparation

  • Gather all your ingredients and preheat your oven to 350°F (175°C).

Cooking the Base

  • In a mixing bowl, cream together the softened butter and powdered sugar until smooth.
  • Gradually add the flour and salt until crumbly. You should achieve a mixture that holds together when pressed.
  • Press this mixture firmly into the bottom of a greased 9x13 inch baking pan.

Bake the Crust

  • Bake the crust for 18-20 minutes or until it turns lightly golden.

Making the Lemon Filling

  • While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, and lemon zest in a separate bowl.

Filling and Swirling

  • Once the crust is baked and has cooled slightly, pour the lemon filling over the warm crust, spreading it evenly.
  • Blend the fresh strawberries with 1/4 cup of sugar until smooth to create the strawberry puree.
  • Drizzle the strawberry puree over the lemon filling and gently swirl it with a knife for a marbled effect.

Final Baking

  • Return the pan to the oven and bake for another 20-25 minutes until the filling is set.

Cooling

  • Allow the bars to cool at room temperature, then refrigerate until chilled.

Serving

  • Slice the bars into squares when ready to serve, and enjoy them cold.

Notes

For added flavor, consider drizzling a light glaze made from powdered sugar and lemon juice over the cooled bars before serving.
